Ingredients
  

  • 2 medium zucchini about 8 oz each
  • 1/2 lb raw shrimp peeled and deveined (21-25 count)
  • 2 cloves garlic minced
  • 2 tbsp olive oil divided
  • 1/4 tsp red pepper flakes optional
  • Salt and black pepper to taste
  • 1 tbsp fresh lemon juice
  • 2 tbsp grated Parmesan cheese optional
  • For the iced coffee pairing: 1 cup strong brewed coffee cooled or cold brew concentrate, 1/2 cup milk or cream, ice cubes

Method
 

  1. Spiralize the zucchini into noodles. Place them in a colander, sprinkle with 1/4 tsp salt, and let sit for 5 minutes. Gently press with paper towels to remove excess moisture.
  2. Pat shrimp dry with paper towels. Season with a pinch of salt and pepper.
  3. Heat 1 tbsp olive oil in a large skillet over medium-high heat until shimmering. Add shrimp in a single layer. Cook 2 minutes per side until pink and opaque. Transfer to a plate.
  4. Reduce heat to medium. Add remaining 1 tbsp olive oil and garlic. Sauté 30 seconds until fragrant, stirring constantly.
  5. Add zucchini noodles and red pepper flakes (if using). Toss gently for 2 minutes—no longer, or they'll get watery. The noodles should be just tender with a slight crunch.
  6. Return shrimp to the skillet. Add lemon juice and toss to combine. Cook 1 minute.
  7. Divide between plates. Top with Parmesan if desired. Serve immediately.
  8. For the iced coffee: Fill a glass with ice. Pour 1/2 cup strong coffee or 1/4 cup cold brew concentrate. Add 1/2 cup milk or cream. Stir. Adjust ratio to taste.

Notes

Store leftover zucchini noodles and shrimp separately in airtight containers in the fridge for up to 2 days. Reheat shrimp gently in a skillet; zucchini noodles are best fresh. The iced coffee can be prepped ahead—brew double-strength coffee and refrigerate. Caffeine affects people differently; if you're sensitive, use decaf or a smaller coffee-to-milk ratio. For safe handling, use a sharp spiralizer blade and watch your fingers. Hot skillet handles—use a towel or mitt.
