- In a small bowl, mix flour, salt, and instant yeast. Add warm water and 1/2 tablespoon olive oil. Stir until a shaggy dough forms.
- Turn dough onto a lightly floured surface. Knead for 3 minutes until smooth and elastic. Cover with a damp towel and rest for 10 minutes.
- Divide dough into 2 equal pieces. Roll each into a 6-inch round, about 1/4-inch thick. Prick surface with a fork to prevent bubbles.
- Heat a 10-inch non-stick skillet over medium heat for 2 minutes. Add remaining 1/2 tablespoon olive oil and swirl to coat.
- Place one dough round in the skillet. Cook for 3 minutes until bottom is golden and set. Flip carefully with a spatula.
- Quickly spread 2 tablespoons sauce on the cooked side, leaving a 1/2-inch border. Sprinkle with 1/4 cup cheese and toppings if using.
- Cover skillet with a lid. Cook for 4 minutes over medium-low heat until cheese melts and bottom is crisp and golden.
- Slide pizza onto a plate. Top with fresh basil. Repeat with second dough round. Serve hot.
Notes
For a gluten-free version, substitute 1:1 gluten-free flour blend. Store leftover pizzas in an airtight container in the fridge for up to 2 days; reheat in a dry skillet over medium heat for 2 minutes. Avoid stacking hot pizzas to keep the crust crisp.
