Ingredients
  

  • 1.5 lbs boneless skinless chicken breasts (or thighs)
  • 1 packet 1 oz ranch seasoning mix (or 2 tbsp homemade blend)
  • 1 cup low-sodium chicken broth
  • 2 tbsp unsalted butter cut into small pieces
  • 1/2 cup heavy cream optional, for creamier sauce
  • Fresh parsley for garnish optional

Method
 

  1. Place the chicken in the crockpot in a single layer. Do not overcrowd; use a 4-6 quart slow cooker for best results.
  2. In a small bowl, whisk the ranch seasoning mix with 2 tablespoons of the chicken broth to form a paste. This ensures even coating without clumps.
  3. Pour the paste over the chicken, then add the remaining broth. Dot the butter pieces on top.
  4. Cover and cook on LOW for 6 hours or HIGH for 4 hours. Check for doneness: internal temp should read 165°F (74°C) for breasts, 175°F for thighs.
  5. Optional: During the last 30 minutes, stir in the heavy cream for a richer sauce. Avoid adding it at the start, as dairy can curdle over long cooking.
  6. Remove chicken with tongs; shred with two forks or slice. Return to the sauce and stir. Garnish with parsley if desired.

Notes

Storage: Keep in an airtight container in the fridge for up to 4 days. Reheat gently on the stove or microwave with a splash of broth. Freezing: Shred the chicken and freeze in sauce for up to 3 months. Serving ideas: over egg noodles, rice, mashed potatoes, or on buns for sandwiches. For a thicker sauce, remove the lid during the last 20 minutes of cooking to let steam escape.
