One-Pan Summer Shrimp Scampi

Ingredients
  

  • 1 1/2 pounds large shrimp 21-25 count, peeled and deveined
  • 3 tablespoons unsalted butter divided
  • 2 tablespoons extra-virgin olive oil
  • 4 cloves garlic thinly sliced
  • 1/4 teaspoon red pepper flakes optional
  • 1/2 cup dry white wine such as Pinot Grigio or Sauvignon Blanc
  • 1/2 cup low-sodium chicken broth
  • Zest of 1 lemon
  • 3 tablespoons fresh lemon juice from about 1 lemon
  • 1/4 cup finely chopped fresh parsley
  • 1/2 teaspoon kosher salt plus more for shrimp
  • 1/4 teaspoon black pepper
  • 8 ounces dried linguine or angel hair pasta
  • 1/4 cup reserved pasta water if needed

Method
 

  1. Bring a large pot of salted water to a boil. Cook pasta 1 minute less than package directions for al dente. Reserve 1/4 cup pasta water, then drain pasta. Set aside.
  2. While pasta cooks, pat shrimp dry with paper towels. Season lightly with salt and pepper.
  3. Heat a large skillet over medium-high heat. Add 1 tablespoon butter and the olive oil. When butter foams, add shrimp in a single layer. Cook without moving for 1 minute, then flip and cook 1 minute more until just pink and opaque. Transfer shrimp to a plate (they will finish cooking in the sauce).
  4. Reduce heat to medium. Add remaining 2 tablespoons butter, garlic, and red pepper flakes. Cook, stirring constantly, until garlic is fragrant and just golden, about 30 seconds. Do not brown the garlic — it turns bitter.
  5. Pour in white wine and chicken broth. Increase heat to medium-high and bring to a simmer. Cook, scraping up any browned bits from the pan, until liquid reduces by about half, 3 to 4 minutes.
  6. Stir in lemon zest, lemon juice, and the cooked pasta. Toss to coat. If the sauce seems too thick, add reserved pasta water a tablespoon at a time until it glistens.
  7. Return shrimp to the skillet, along with any accumulated juices. Toss for 30 seconds just to warm through. Remove from heat.
  8. Sprinkle with fresh parsley and serve immediately. Pass extra lemon wedges at the table.

Notes

Storage: Best eaten fresh. Leftovers keep in an airtight container in the fridge for up to 1 day. Reheat gently in a skillet with a splash of broth to revive the sauce. Not suitable for freezing (shrimp turns rubbery).
Serving tip: Serve with crusty bread to soak up every drop of the garlic-lemon butter. For a lighter meal, swap pasta for zucchini noodles — add them raw in step 6 and toss just until warmed.
Allergen note: Contains shellfish and dairy. Gluten-free if using GF pasta. For dairy-free, use all olive oil and a splash of unsweetened oat milk or extra broth.
