Ingredients
  

  • 1 1/2 pounds boneless skinless chicken breasts about 2-3 breasts
  • 1 tablespoon olive oil
  • 1 medium yellow onion diced
  • 3 cloves garlic minced
  • 1 jalapeño seeded and finely diced (optional for heat)
  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper optional
  • 1 14.5-ounce can fire-roasted diced tomatoes, undrained
  • 1 4-ounce can diced green chiles, undrained
  • 4 cups low-sodium chicken broth
  • 1 15-ounce can black beans, rinsed and drained
  • 1 cup frozen corn kernels no need to thaw
  • Juice of 1 lime about 2 tablespoons
  • Salt and black pepper to taste
  • For serving: baked tortilla strips diced avocado, fresh cilantro, lime wedges

Method
 

  1. Pat the chicken breasts dry with paper towels. Season both sides with a pinch of salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 2-3 minutes per side until golden brown. Remove and set aside. (This step builds deep flavor—don't skip it.)
  3. In the same skillet, add the onion and cook for 4 minutes until translucent. Add the garlic and jalapeño, cook 1 minute more. Stir in the chili powder, cumin, smoked paprika, oregano, and cayenne. Cook for 30 seconds until fragrant.
  4. Transfer the onion-spice mixture to the slow cooker. Add the fire-roasted tomatoes, green chiles, and chicken broth. Stir to combine.
  5. Nestle the seared chicken breasts into the liquid. Cover and cook on low for 6 hours or on high for 3 hours, until the chicken shreds easily with a fork.
  6. Remove the chicken to a cutting board. Shred with two forks. Return the shredded chicken to the slow cooker.
  7. Stir in the black beans, frozen corn, and lime juice. Taste and adjust salt and pepper. Let cook uncovered for 10 minutes to blend flavors. The corn should be tender but not mushy.
  8. Ladle into bowls and top with baked tortilla strips, avocado, cilantro, and a squeeze of lime.

Notes

Storage: Cool completely, then refrigerate in an airtight container for up to 4 days. The soup thickens as it sits—thin with a splash of broth when reheating. Freeze for up to 3 months without toppings. For a thicker soup, mash some of the beans before adding. To make tortilla strips: cut corn tortillas into thin strips, toss with a little oil and salt, and bake at 375°F for 10-12 minutes until crisp. Handle the slow cooker safely: use oven mitts when removing the lid, and keep the cord away from counter edges.
