Ingredients
  

  • 2 lbs boneless skinless chicken breasts or thighs
  • 1 cup low-sodium chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Optional: 1/2 cup barbecue sauce or your favorite seasoning blend

Method
 

  1. Pat chicken dry with paper towels. This step matters—moisture on the surface prevents proper browning and can lead to a watery final dish.
  2. In a small bowl, mix salt, pepper, garlic powder, onion powder, and smoked paprika. Rub evenly over chicken pieces.
  3. Pour chicken broth into the crockpot. Add seasoned chicken in a single layer if possible. Do not stack if you can avoid it; even cooking depends on surface contact.
  4. Cover and cook on LOW for 7-8 hours or on HIGH for 3.5-4 hours. For precise results, I cook on low until the internal temperature of the thickest piece reaches 195°F (90°C). This temperature breaks down collagen and makes shredding effortless.
  5. Using tongs, transfer chicken to a cutting board. Let rest 5 minutes. Reserve cooking liquid.
  6. Shred chicken with two forks. If it doesn't shred easily, it needs more time. Return to crockpot with 1/2 cup of reserved liquid to keep it moist. Stir in barbecue sauce now if using.
  7. Serve immediately over rice, greens, or in tortillas. The chicken will hold on warm setting for up to 2 hours.

Notes

Storage: Keep shredded chicken in an airtight container in the fridge for up to 4 days. Reheat gently with a splash of broth to restore moisture. Freezes well for up to 3 months—portion into freezer bags and thaw overnight in the fridge. For a leaner option, use chicken breasts and reduce cook time to 6-7 hours on low. Always use a meat thermometer to confirm doneness; visual cues alone can be misleading.
