Ingredients
  

  • 4 large 10-inch flour tortillas
  • 2 boneless skinless chicken breasts about 1 lb total
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup Caesar dressing homemade or quality store-bought
  • 1 teaspoon lemon zest from 1 lemon
  • 4 cups chopped romaine lettuce
  • 1/2 cup shaved Parmesan cheese
  • 1/4 cup croutons optional, crushed
  • Fresh lemon juice for finishing

Method
 

  1. Pat chicken breasts dry with paper towels. Season both sides with salt and pepper. Heat olive oil in a large skillet over medium-high heat until shimmering. Add chicken and cook 4-5 minutes per side, until golden brown and internal temperature reaches 165°F. Let rest 5 minutes, then slice thinly against the grain.
  2. In a small bowl, whisk together Caesar dressing and lemon zest until combined. Set aside.
  3. Warm tortillas one at a time in a dry skillet over medium heat for 20 seconds per side, until pliable but not crisp. Stack and cover with a clean kitchen towel.
  4. In a large bowl, toss chopped romaine with half the dressing mixture until evenly coated. Add sliced chicken, shaved Parmesan, and crushed croutons (if using). Gently toss again.
  5. To assemble each wrap: Lay a tortilla flat. Spoon about 1 cup of the salad mixture onto the lower third, leaving 2 inches clear on each side. Fold the sides inward, then roll tightly from the bottom, tucking as you go. Place seam-side down.
  6. Slice each wrap in half on a bias. Drizzle remaining dressing over the cut edge or serve on the side. Squeeze a little fresh lemon juice over the top right before serving.

Notes

For meal prep, keep dressing separate and assemble just before eating to prevent soggy wraps. Store components in the fridge up to 2 days. To reheat chicken, warm in a skillet with a splash of water to keep it moist. Tortillas can be wrapped in foil and warmed in a 350°F oven for 5 minutes.
