  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cayenne pepper
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup strong brewed iced coffee cooled
  • 2 tbsp brown sugar
  • 1 tbsp apple cider vinegar
  • 1 cup cooked white rice
  • 1 cup diced cucumber
  • 1 cup cherry tomatoes halved
  • 1/4 cup chopped fresh parsley
  • Lime wedges for serving

Method
 

  1. In a large bowl, whisk together olive oil, smoked paprika, garlic powder, onion powder, cayenne, oregano, salt, and black pepper. Add shrimp and toss to coat. Let marinate 10 minutes.
  2. In a small saucepan, combine iced coffee, brown sugar, and apple cider vinegar. Simmer over medium heat for 5-7 minutes, stirring occasionally, until slightly thickened and syrupy. Remove from heat.
  3. Heat a grill or cast-iron skillet over medium-high heat. Cook shrimp for 2-3 minutes per side until pink and charred at the edges. Remove from heat.
  4. Assemble bowls: divide rice among 4 bowls. Top with cucumber, tomatoes, and shrimp. Drizzle with the coffee glaze and sprinkle with parsley. Serve with lime wedges.

Notes

For a milder spice, reduce cayenne to 1/4 tsp. The coffee glaze can be made ahead and refrigerated for up to 3 days; reheat gently before serving. Shrimp can be replaced with chicken or tofu. Caffeine content varies; those sensitive to caffeine should adjust coffee strength or consult a professional.
