Ingredients
  

  • 2 lbs boneless skinless chicken breasts
  • 1 cup chicken broth
  • 1/2 cup Caesar dressing homemade or quality store-bought
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons lemon juice fresh squeezed
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 cup chopped fresh parsley optional
  • 1 cup croutons for serving, optional

Method
 

  1. Place chicken breasts in the slow cooker. Pour chicken broth over them. Cover and cook on low for 4 hours, or until chicken reaches an internal temperature of 165°F and shreds easily. Use a meat thermometer to check—don't guess.
  2. Remove chicken from slow cooker and let rest for 5 minutes. Shred with two forks or a hand mixer on low speed. Return shredded chicken to the slow cooker and discard excess broth, leaving about 1/4 cup to keep it moist.
  3. In a small bowl, whisk together Caesar dressing, Parmesan, lemon juice, garlic powder, pepper, and salt until smooth. Pour over the shredded chicken.
  4. Stir the dressing into the chicken until evenly coated. Cook on low for another 15 minutes to meld flavors. The texture should be creamy, not watery—if it's too thin, add a tablespoon more Parmesan.
  5. Stir in parsley if using. Serve immediately on bread, in lettuce wraps, or over greens. Top with croutons for crunch.
  6. Handle the slow cooker safely: use oven mitts when lifting the lid, and keep electrical cords away from water.

Notes

Store leftover filling in an airtight container in the fridge for up to 3 days. Reheat gently in a skillet over low heat, adding a splash of broth if needed. This filling also freezes well for up to 1 month—thaw overnight in the fridge before reheating. For a lighter version, use Greek yogurt-based Caesar dressing. Note: Caffeine is not a concern here, but if you're sensitive to sodium, adjust the added salt accordingly.
