- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, smoked paprika, and a pinch of salt and pepper.
- Add the shrimp to the bowl and toss to coat evenly. Let marinate at room temperature for 10 minutes (no longer—acid from lemon can make shrimp mushy).
- Preheat your grill to medium-high heat, around 400-450°F. Clean and oil the grates to prevent sticking.
- Thread shrimp onto skewers, pushing them close together but not overlapping. Leave a small gap between each for even cooking.
- Grill skewers for 2-3 minutes per side, until shrimp are opaque and have a slight char. The internal temperature should reach 120°F; they continue cooking after removal.
- Remove from grill and let rest for 1 minute. Serve immediately with lemon wedges or your favorite dipping sauce.
Notes
For best results, don't overcook shrimp—they go from perfect to rubbery quickly. If using metal skewers, handle with oven mitts as they get hot. Leftover shrimp can be refrigerated in an airtight container for up to 2 days; reheat gently in a skillet or microwave. The smoked paprika adds a subtle smoky depth, but you can substitute with regular paprika or a pinch of cayenne for heat.
