20-Minute Summer Pepperoni Flatbread

A no-yeast flatbread with a golden, crisp crust, topped with spicy pepperoni and melted mozzarella. Ready in 20 minutes from start to finish.

Ingredients
  

  • 1 cup 120g all-purpose flour
  • 1/2 teaspoon 3g salt
  • 1/2 teaspoon 2g baking powder
  • 1/3 cup 80ml warm water
  • 1 tablespoon 15ml olive oil, plus more for skillet
  • 1/3 cup 80ml pizza sauce
  • 1/2 cup 60g shredded mozzarella
  • 12-16 slices pepperoni
  • Fresh basil or oregano optional

Method
 

  1. In a bowl, whisk together flour, salt, and baking powder. Add warm water and olive oil. Stir with a fork until a shaggy dough forms, then knead in the bowl for 1 minute until smooth. Cover and rest 5 minutes.
  2. Divide dough into 2 equal pieces. On a lightly floured surface, roll each into an 8-inch circle, about 1/8-inch thick.
  3. Heat a 10-inch cast iron or nonstick skillet over medium-high heat. Add 1 teaspoon olive oil and spread it around. Place one dough circle in the skillet. Cook 2-3 minutes until bubbles form and bottom is golden brown. Flip.
  4. On the cooked side, spread half the pizza sauce, leaving a 1/2-inch border. Sprinkle half the mozzarella, then arrange 6-8 pepperoni slices. Cover the skillet with a lid (or a baking sheet) to trap steam. Cook 2-3 minutes until cheese melts and bottom is golden.
  5. Transfer to a cutting board. Repeat with remaining dough. Garnish with fresh herbs if desired. Slice and serve hot.

Notes

Store leftover flatbreads in an airtight container in the fridge for up to 2 days. Reheat in a dry skillet over medium heat for 2 minutes per side to restore crispness. For a spicier kick, add red pepper flakes or use spicy pepperoni.
