20-Minute Crockpot Pulled Pork Tacos

Ingredients
  

  • 1 ½ lbs pork shoulder cut into 2-inch chunks
  • 1 tbsp medium-roast coffee finely ground
  • 1 tsp smoked paprika
  • ½ tsp cumin
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil
  • ½ cup chicken broth
  • 8 small corn or flour tortillas
  • ½ cup fresh cilantro chopped
  • 1 lime cut into wedges
  • Optional: sliced radishes crumbled cotija cheese, salsa verde

Method
 

  1. In a small bowl, mix the ground coffee, smoked paprika, cumin, garlic powder, onion powder, salt, and pepper.
  2. Pat the pork chunks dry with paper towels. Rub the spice mixture all over the meat, pressing it in.
  3. Set the pressure cooker to sauté mode (high). Add the olive oil and let it shimmer.
  4. Sear the pork in batches — don’t crowd the pot — until browned on two sides, about 2 minutes per batch. Transfer seared pieces to a plate.
  5. Pour the chicken broth into the pot and scrape up any browned bits with a wooden spoon.
  6. Return all pork to the pot. Lock the lid and set the pressure cooker to high for 20 minutes.
  7. When the timer goes off, let the pressure release naturally for 10 minutes, then quick-release the rest.
  8. Remove the pork with tongs to a cutting board. Shred with two forks. Taste and add a pinch of salt if needed.
  9. Warm the tortillas in a dry skillet over medium heat for 30 seconds per side.
  10. Fill each tortilla with shredded pork, top with cilantro, a squeeze of lime, and any extras you like.

Notes

Leftover pulled pork keeps in the fridge for 3 days. Reheat gently in a skillet with a splash of broth. The coffee rub works equally well on chicken thighs or beef chuck — adjust cooking time to 15 minutes for chicken, 25 for beef. For a milder coffee flavor, use a light roast grind; dark roast adds more smokiness. Caffeine content in the rub is negligible, but if you’re sensitive, know that trace amounts remain. Handle the pressure cooker lid carefully when releasing steam — it’s hot.
